Crowned the ‘Egg Master of Sydney’ and ‘creator of avocado toast’, Bill Granger is renowned as the restauranteur who brought laid-back Australian cafe culture to the world, and is beloved by family cooks and culinary sophisticates alike.

The empire that is ‘bills’ began with the original Darlinghurst street-corner cafe 26 years ago and is credited as the first place anywhere to put the now-iconic breakfast of avocado toast on the menu. Since then, from Sydney to Tokyo, London to Seoul, people around the world have queued for a taste of his absurdly fluffy ricotta hotcakes and creamy scrambled eggs, and fallen in love with this sunny, relaxed, and very Australian way of eating. 

Ahead of his new book release, Australian Food, Bill Granger talks with food writer Adam Liaw to celebrate the global phenomenon of Australian cafe culture, the evolution of a national cuisine and the uniqueness of Australian food.

Bill Granger is an Australian restauranteur and food writer, loved by family cooks and sophisticated foodies alike In 1993, Bill dropped out of art school and opened his first restaurant, bills, in Sydney’s Darlinghurst. In 2008 Bill’s restaurants went international starting in Tokyo, and on to London, Honolulu and Seoul. Bill has written 11 cookbooks, selling in excess of 1 million copies, and has made 5 cookery series seen in over 30 countries, world which offer up a uniquely Australian way of eating. Bill lives with his family in London and appears in food media around the world. His twelfth book, Australian Food will be published in October. Adam Liaw is the author of six cookbooks and host of the award-winning SBS television series Destination Flavour, his approachable and family-friendly recipes are influenced by his global travels, but remain focussed on the simplicity of contemporary Australian home cooking. In 2016 the Japanese government appointed Adam as an official Goodwill Ambassador for Japanese Cuisine. He is a columnist for Nine’s Good Food and Sunday Life Magazine.
