Peter GilmoreIt's an absolute honour to represent Bennelong and our incredible team for Chefs of the House.
The Icons of Bennelong
The philosophy driving Bennelong is all about the provenance of the food they are serving. Committed to showcasing Australia's best produce, Bennelong's menus are crafted in partnership with farmers, fishermen, breeders and providores from across the land whom the chefs work together with every day.
On the evening, Executive Chef Peter Gilmore will welcome guests on arrival and introduce the thoughtfully crafted menu and paired wines that draw on the relationships with local farms and producers, while visual projections and a live jazz performance complements the unique theme in this intimate shared-table dining experience.
Meet the Chef
Peter Gilmore is the Executive Chef at two of Australia’s most exciting and dynamic restaurants - Bennelong at the Sydney Opera House and Quay restaurant across the harbour in The Rocks. Peter was born and bred in Sydney. He was inspired to cook at a young age and started his apprenticeship at 16, then spent his twenties working in kitchens overseas and in country New South Wales, developing his own style.
Peter describes his cuisine as food inspired by nature and as a passionate gardener himself, he was one of the first chefs in Australia to embrace heirloom varieties of vegetables and continues to work in partnership with small producers who cultivate produce exclusively for both Bennelong and Quay.
Peter’s creative and original cuisine has seen both restaurants receive an unprecedented number of Australian and international awards. He has released three cookbooks - Quay: Food Inspired by Nature published in 2010; Organum: nature, texture, intensity, purity in 2014; and From The Earth published in 2018.
Peter continues to be a leading figure in Australia’s vibrant food scene.
